If you are longing for a tropical paradise but don’t have it in the budget to dart off to an island then this is a dish that could help satisfy your longing. This salsa is very light and refreshing and is a great match for many different dishes. It’s very good on chicken, fish, shrimp, scallops, pork etc… If you are looking to spice it up a bit another variation would be to add finely diced up jalapenos and sweet onions if you wish – Just remember that both the mango and strawberry are very light flavors and adding too much will overwhelm the strawberries and mango so easy does it.
Mango

Pineapple juice (or orange juice)
Dice the mango, and slice the strawberries – I would go with equal amounts of each. If you use a cup of each you will need about half a bunch of cilantro finely chopped added. If you have some pineapple or orangee juice it would be good to have a few tablespoons in there to help bring everything together. Mix and let sit for at least 20 minutes before serving.
