<p>Place the peanut butter in a microwave proof bowl and microwave for 45 seconds.  Add the rest of the items to the bowl and mix well.</p>

			<content:encoded><![CDATA[<p>I am one of those people that read cooking manuals as my fun, light reading.  I came across the most amazing recipe for The Best Chocolate Chip Cookies know to mankind.  This recipe came from Baking Illustrated, page 434  During our test run we made a batch for our co-workers.  These cookies did not last 5 minutes and we had people very upset that they didn&#8217;t get their cookie.</p>
<p>BEWARE&#8230;.This recipe makes some BIG cookies.  Perfect for sharing or bribing the kids to get those extra chores done around the house.</p>
<p>2 cups plus 2 Tbsp all-purpose flour<br />
1/2 tsp baking soda<br />
1/2 tsp salt<br />
12 Tbsp (1 1/2 sticks) unsalted butter, melted and cooled until warm<br />
1 cup packed light or dark brown sugar<br />
1/2 cup granulated sugar<br />
1 large egg plus 1 egg yolk<br />
2 tsp vanilla extract<br />
1-1 1/2 cups semisweet chocolate chips</p>
<p>Adjust the oven racks to the middle positions and preheat the oven to 325 degrees. Line 2 large baking sheets with parchment paper, or spray them with nonstick cooking spray.</p>
<p>Whisk the flour, baking soda, and salt together in a medium bowl.</p>
<p>Mix the butter and sugars until thoroughly blended. Beat in the egg, yolk, and vanilla until combined. Add the dry ingredients and beat at low speed just until combined. Stir in the chocolate chips.</p>
<p>Roll a 1/4 cup of the dough into a ball. Hold the dough ball with the fingertips of both hands and pull into 2 equal halves. Rotate the halves 90 degrees and, with jagged surfaces facing up, join the halves together at their base, again forming a single ball, being careful not to smooth the dough’s uneven surface. Place the formed dough balls on the prepared baking sheets, jagged surface up, spacing them 2 1/2 inches apart. Hard to put in words &#8211; watch the video&#8230;</p>
<p>Bake until the cookies are light golden grown and the outer edges start to harden yet the centers are still soft and puffy, 15 to 18 minutes, rotating the baking sheets front to back and top to bottom halfway through the baking time. Cool the cookies on the sheets.  This is the point where hired guards would be a good idea otherwise they are sure to disappear in no time flat.</p>

			<content:encoded><![CDATA[<p>I&#8217;ve seen many different ways to make this recipe, but this is the one I like best. Many of the recipes I&#8217;ve come across call for cream cheese and milk but I found that it is definately not needed.  This is the lightest version I&#8217;ve found and a great sweet dessert for even those obsessed with the scale.  None of the taste is lost on eliminating these items.   This recipe is super light and tasty.  If you want a nice and easy dessert &#8211; this is the one to try!</p>
<p>1 Can Crushed Pineapple, in juice<br />
1 Large Pkg JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding<br />
1 Tub Lite Cool Whip<br />
1 Angel food cake, cut horizontally into 2 layers<br />
10 Strawberries</p>
<p>Mix pineapple and dry pudding mix in medium bowl with whisk until well blended. Stir in the cool whip. Put bowl in the fridge for 20-30 minutes. Slice the angel food cake into two equal layers. Add some of the pineapple mixture to the bottom layer then place the top back on the cake creating a center layer of &#8220;fluff&#8221;. Use the rest of the mixture to &#8216;ice&#8217; the cake. Refrigerate 1 hour. Top with berries just before serving. Eat &amp; Enjoy!</p>

<p>Not much of a stretch here &#8211; over easy eggs with curry powder and heated naan! Exciting huh? Yes this is a boring entry I will admit. I had the video and I decided to post it.</p>
<p>Actually I love eggs with curry. I love poaching eggs in a green or read curry sauce &#8211; brings a whole new level to poached eggs&#8230;</p>
<p>2 Eggs<br />
Naan<br />
Curry Powder<br />
Salt<br />
Pepper<br />
Butter</p>
<p>Bring a pan to medium heat and melt a spot of butter. Crack two eggs into the pan. Add a dash of curry powder, salt, pepper. Heat the naan in a pan with a bit of butter on both sides. Serve the cooked eggs on top of the naan. Eat &amp; Enjoy!</p>

			<content:encoded><![CDATA[<p>If you are longing for a tropical paradise but don&#8217;t have it in the budget to dart off to an island then this is a dish that could help satisfy your longing.  This salsa is very light and refreshing and is a great match for many different dishes.   It&#8217;s very good on chicken, fish, shrimp, scallops, pork etc&#8230; If you are looking to spice it up a bit another variation would be to add finely diced up jalapenos and sweet onions if you wish &#8211; Just remember that both the mango and strawberry are very light flavors and adding too much will overwhelm the strawberries and mango so easy does it.</p>
<p>Mango<br />
Strawberries<br />
Cilantro<br />
Pineapple juice (or orange juice)</p>
<p>Dice the mango, and slice the strawberries &#8211; I would go with equal amounts of each. If you use a cup of each you will need about half a bunch of cilantro finely chopped added. If you have some pineapple or orangee juice it would be good to have a few tablespoons in there to help bring everything together. Mix and let sit for at least 20 minutes before serving.</p>

			<content:encoded><![CDATA[<p>Pizza Rolls&#8230;.It&#8217;s a simple, fun food that makes your tummy smile.  Not to mention it&#8217;s a great snack to get your kids involved in making.  There&#8217;s nothing overly difficult or precise so even the little ones can enjoy this.   One thing we&#8217;ve learned about making these at home, is that you want to precook your pepperoni (if you decide to add it)just a bit to get rid of some of the grease. Same thing goes for sausage. You don&#8217;t have to do this but be warned, it becomes a real mess to eat for kids and adults! The best part of making these at home is due to their size you can add whatever you want to the center of them.  We always enjoy making these when we host slumber parties because everyone gets to create their own masterpiece and share the goodies.</p>
<p>1 Pkg Egg Roll Wrappers (or you can roll your own sheet pasta)<br />
1/4 Lb Provolone Cheese, sliced or diced<br />
1/4 Lb Mozzarella Cheese, sliced or diced<br />
Pizza Sauce<br />
Mushrooms<br />
Green Peppers<br />
Onions<br />
Whatever you like on your pizza<br />
Dried Oregano<br />
Water</p>
<p>Place one of the wrappers in front of you. In the center add a slice of the provolone cheese. Top the cheese with 8 or 9 slices of the pepperoni (if using small rounds). At this point you can add any additional ingredients you like but don&#8217;t overload the roll! Top with some pizza sauce, a pinch of oregano, and a slice of the mozzarella cheese. Now it&#8217;s time to roll! Wet the edges of the wrap with a smudge of water.  Start with one of the corners and fold over to almost the middle of the wrap. Start rolling until you get to almost the half way point, then fold in the sides of the wrap. See the video for a demonstration of this.   Continue rolling to the end of the wrap. Place in a pan seam side down. You have two methods you can use to cook these.  You can fry them in oil, or bake them in the oven.  If you bake them, spritz them down with olive oil and bake them at 375 until they are brown &#8211; you will need to keep turning them so they don&#8217;t burn.  The time needed will vary based on the amount of toppings inside so keep an eye on them until they are golden brown.   Once done let them cool for a couple of minutes so you don&#8217;t blister your tongue.  That would put a real damper on a funfilled evening.   Eat &amp; Enjoy!</p>

			<content:encoded><![CDATA[<p>Baseball and hotdogs&#8230;.no better combination on earth.  Anyone can cook a hotdog but if you are looking to knock one out of the park in terms of great flavor, give this a try.  I found this recipe on YouTube from a guy name Hallsy&#8230; He says it came from a famous hot dog company that you should probably know &#8211; New Way Lunch.  It was reminiscent of a sauce I have enjoyed in my past with just a bit of a curve ball thrown in to shake it up.  I thought they used cinnamon instead of curry powder.  I enjoyed this recipe but the house smelled like curry and the STBW (soon to be wife) didn&#8217;t like that too well&#8230;</p>
<p>1 Lb Beef, minced<br />
3.5 tsp Chile Powder<br />
2.5 tsp Curry Powder<br />
1 tsp Nutmeg<br />
2 tsp Onion Powder<br />
.5 tsp Black Pepper<br />
1.5 Cups Water</p>
<p>Brown the beef in a skillet. Once the beef is done, drain off most all of the fat. Add the chile powder, curry powder, nutmeg, onion powder, and black pepper and mix into the beef well. Cook for 1 minute over medium heat then add the water. Bring mixture to a simmer, cover and continue simmering for an hour. You can add more water if the mixture gets too thick.  Now all you need is the perrfectly grilled dog on a freshly steamed bun.  MMMMM, my mouth is watering again just typing this. Eat &amp; Enjoy!</p>

<p>If you would like to make it a bit healthier you can replace half the beef with a half pound of turkey &#8211; If you want to use all turkey then you need to kick up the spices a bit. I&#8217;ve never tried it but if you really wanted to, you could use a tofu Hot Dog and replace the meat with tofu crumbles but then what&#8217;s the point really&#8230;..</p>

1/2 cup mayonnaise<br />
.5 cup grated Monterrey jack cheese<br />
1.5 cup grated sharp cheddar cheese<br />

2-3 tablespoons pimentos, diced<br />
Black Pepper</p>
<p>The easiest way to make this dish is to bring everything to room temperature, throw all but the pimentos into a food processor and blitz it up.  Add the pimentos and fold them in.  You can put it into a bowl and use your hands or a spoon to bring it all together. It&#8217;s an easy dish to make and you can be somewhat creative with the cheeses you use. Make sure you let it sit for a bit after you bring it together to allow all of the flavors of the ingredients to meld together. It makes a great grilled cheese sammy, or it&#8217;s good in mac n cheese&#8230;</p>

<p>Ok this is one of the first cooking videos I ever made. It may say it&#8217;s episode 13 but reall,y it was the second video I ever did&#8230; I&#8217;ll admit it&#8217;s pretty bad, and it&#8217;s not the one I made for this recipe, but it did make a good pimento cheese&#8230; I will be doing another video with this in the near future (my new fav recipe).</p>

			<content:encoded><![CDATA[<p>Who doesn&#8217;t like a nice grilled cheese? Ok, I know a few people who don&#8217;t eat cheese (and I don&#8217;t trust them)&#8230; You can add a lot to a grilled cheese to take it up a notch, but a simple tomato adds wonders if you ask me.  Since I started cooking I&#8217;ve been the one to always make the grilled cheese in my family. The best thing about a grilled cheese to me is that it doesn&#8217;t have to be fancy to be good &#8211; white bread and American cheese are just fine - so is homemade wheat bread with English cheddar&#8230;</p>
<p>2 slices of Bread<br />
cheese (The more exotic &#8211; the better the experience could be)<br />
tomato (Vine riped organic Beefstake are my preference)<br />
butter (None of that fake stuff &#8211; it&#8217;s against my religion)</p>
<p>Bring a pan to a medium heat. Butter one side of each of your pieces of bread. Place the butter side of one down on the pan, add the cheese, the tomato, and a bit of cheese on top then top with the other piece of bread (butter side up). Cover and let cook checking the bottom every so often so it doesn&#8217;t burn. Once the bottom is golden brown, flip the sammy over and cook again. Once finished let sit for a minute or so so the cheese can set up a bit then Eat &amp; Enjoy!</p>
